Do you ever think when you get up in the morning what food will you eat today???
Cereal, Toast, fruit so many choices, And that’s just breakfast !
What to drink with it…. the list goes on.
Coffee, Tea, Juice, a smoothie. So many choices.
I’ll have coffee first thanks.
My husband often says why can’t I just take a food pill, would be a lot easier, Think of it .. Chocolate, Strawberry, Vanilla, Caramel and the list goes on, and that’s only the beginning of the day!
So many people these days are by themselves, my friends often say what are you having for dinner tonight??
Don’t you get sick of thinking what to have??
We have a bigger lunch now as both being home at that time, Generally something I’ve cooked fresh or out of the freezer.
Summertime what do we eat ??
Salads, salads and guess what.. more salad ! Surely there must be a limit,
I know,,, pasta. Who doesn’t love pasta! And that becomes another food conundrum, what type of pasta? What sauce to have with it ? You just can’t get away with having to choose.
At home you have to choose, dining out you have to choose.
Last week I made a beautiful homemade pasta sauce with gifts from our veggie garden.
I added vegetarian plant balls from IKEA for my husband and homemade meatballs for me. I had the garlic rolls ready fresh out of the air fryer. I had the pasta sauce with the meatballs/ veggie balls added, fresh & piping hot, garlic rolls too, put it on the table and hubby says WHERE”S THE PASTA????
Who’s done that before???? How many of you can identify???
Once we put on this formal dinner when living overseas, guess who served up all the food dishes and forgot the plates!
I really don’t enjoy every day cooking much, it”s a necessity,
I excel with desserts, cakes & all those yummy things I shouldn’t have. I love to cook these days for my friends.
Looking back on my cooking
When we first got married 40 years ago my husband says the only vegetable I knew was a hot chip!
A slight exaggeration I think on his part. He did teach me to cook quiche, but just lately I’ve found it easier to buy them from the supermarket, Yes I had a monumental failure in making one.. what did I do.. forgot to dry the spinach before adding it, I blind baked the pastry, everything went smoothly until the taste!!! Too much water, it had made it so soggy and ruined it.
I haven’t revisited the making of quiche again.
Another taste sensation he taught me to cook was Apricot Nectar Chicken,
Now you need to remember this was the 1980″s and it was a very popular quick and easy dish.
The problem was I ended up serving it up every fortnight for six months until he said NO MORE!
I’ll end this story with a favourite recipe. It’s easy to make and good to freeze.

American Macaroni Cheese
2 Cups elbow pasta
1/4 cup finely diced onion
2 cups milk ( you can use soy too)
1/4 cup butter ( alternative Nutalex)
1/4 cup flour
1 cup of grated cheese ( I prefer an extra tasty or vintage)
Method
Cook the pasta in boiling water, when done place in a casserole dish.
In a glass jug, melt the butter, add the flour and little of the milk to make a roue.Then blend in the rest of the milk.
I put it on a medium high setting in the microwave and whisk every minute until thick like a bechamel sauce. About 4 minutes. You can also do this in a sauce pan.
Add the grated cheese, diced onion and pepper/salt as liked.
Stir through the pasta and decorate the top with tomato if desired.
Place dish in preheated oven @ 200 c for 35 minutes or til browned and bubbling.
Will keep in fridge for a few days and in freezer if it gets that far. I really enjoy it with tomato relish dabbed,
